The aim: evaluate natural canned Japanese mackerel as specialized products for dietary nutrition based on indicators of nutritional and biological value, well lipid health indices. methods: (chemical composition) value mackerel, the composition lipids fatty acids were studied, basis which indices atherogenicity, thrombogenicity hypocholesterolemic coefficient calculated, characterizing properties mackerel. results: It has been established that process high-temperature preservation does not cause significant changes in nutrient product. Canned is characterized by a high content phospholipids (7.80 ± 1.1 total or 1.41 0.3 g per 100 product) PUFAs omega-3 family (32.26 % number acids). index atherogenicity profile food was 0.57, — 0.16, 2.80. Conclusions: are rich source essential lipids. characterize potential product to normalize metabolism humans reduce risk developing diseases cardiovascular system. newness: Based new methodological approach assessing possible positive effect cholesterol rate thrombus formation human blood vessels shown. practical significance: Natural from can be recommended inclusion diet certain population groups preventive nutrition.
